Mott 32 is one of the leading Chinese restaurants in the world. Created in Hong Kong, “Mott 32” pays homage to 32 Mott Street in New York, where the city’s first Chinese convenience store opened in 1891. The store served as the nucleus for what is now a vibrant Chinatown in one of the most dynamic cities.
The provenance of our ingredients is of paramount importance to us as we embrace unique flavors discovered globally. We practice ethical sourcing by using organic and sustainable ingredients, wherever possible, while also working closely with farms to ensure the uncompromising quality of the food our culinary team prepares.
Our chefs utilize the latest in modern and innovative cooking techniques from around the world to create our dishes, which are principally Cantonese with some Beijing and Szechuan influences. Our food aims to bring the best out of time-honored recipes passed down from generation to generation; it is this particular level of modernity, combined with a respect for tradition, that makes Mott 32 so spectacularly unique.

CHEF TAM WAI SING
Leading the kitchen team of an acclaimed and award-winning restaurant such as Mott 32 is no easy feat. After all, the upscale restaurant in NUSTAR Resort and Casino is introducing to Cebu a modern approach to Chinese cuisine through its dishes that beautifully blend tradition and innovation.
However, Mott 32 Cebu’s exceptional Chinese cuisine comes naturally to Executive Chef Tam Wi Sang, who grew up in Hong Kong, one of the world’s top culinary destinations. His career started there where he worked as assistant executive chef for the Hong Kong Maxim Group in 1991.
Chef Tam’s first exposure to the Philippine foodscape dates back to 1994 when he joined Gloria Maris Restaurant in Pasay City, Philippines, where he was Chinese executive chef.
Today, he leads Mott 32 Cebu where he dishes out Cantonese specialties using time-honored recipes, quality ingredients, and inventive cooking techniques which he has acquired throughout the years.
